2 Tbsp butter, melted
4 eggs
3/4 cup milk
3/4 cup flour
1 Tbsp sugar
1 tsp vanilla
1/4 tsp salt

  • mix in blender until frothy

2 Tbsp butter, melted icing/confectioner’s sugar, for garnish

  • heat pan in oven at 425°F
  • remove from oven, brush with butter, and fill with batter
  • fill muffin wells 1/2 way with batter and bake for 15-18 minutes, until puffy and browned
  • serve with compote and powdered sugar
