1 Tbsp. olive oil
2 cloves garlic, minced
1 1/3 cups pearl cous cous
salt and pepper, to taste
2 cups boiling water

  • heat oil in a small pan with a tight fitting lid
  • saute garlic until just starting to brown
  • add cous cous, salt and pepper and stir
  • add water and stir
  • bring to a boil, cover, and reduce heat to low
  • simmer for 8 minutes, stirring occasionally
