2 Tbsp. olive oil
1 small onion, diced
1 bell pepper, diced
3 cloves garlic, minced

  • saute for 5 minutes

4 oz. pimentos, drained and sliced
8 oz. tomato sauce

  • add and saute for 1 minute

2 cups rice, rinsed
2 1/2 cups water
1 cup chicken stock
1/8 tsp. annatto powder
1 bay leaf
1/4 tsp. salt
1/4 tsp. pepper

  • add remaining ingredients, bring to a boil, then reduce heat and cover
  • simmer for 15 minutes without removing the lid
  • remove from heat and rest 5 minutes without removing lid
