2 slices bacon, diced
1 roma tomato, diced
1/4 onion, diced
1/4 bunch, cilantro, chopped
1 jalapeno, diced
1 clove garlic, minced
1/2 tsp. black pepper
1/2 tsp. oregano
1/2 tsp. cumin
1/2 tsp. paprika
15 oz. can pinto beans
1 cup chicken stock

  • saute bacon until cooked, about 5 minutes
  • add tomato, onion, garlic, jalapeno, and spices and cook 5 minutes
  • add beans and bring to a boil for 15 minutes
  • add chicken stock as needed to maintain consistency
