dough:

1 1/4 cup milk
1/4 cup vegetable oil
1/2 cup sugar substitute
2 Tbsp. sugar
1 1/4 tsp. dry yeast
1 1/2 cup flour
1 cups almond flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

  • heat milk, oil, and sugars in a large pot until reaching 170°F, then cool to 110°F (chilling in an ice bath will speed this up greatly).
  • sprinkle yeast over mixture, rest 5 minutes.
  • add flour and 1/2 cup of almond flour, mix, cover and let rise for 1 hour.
  • add remaining ingredients and mix thoroughly.
  • make cinnamon rolls immediately or refrigerate overnight for the morning.

filling:

4 Tbsp. butter
1/2 cup brown sugar substitute
2 Tbsp. cinnamon

  • roll out dough into a large rectangle.
  • spread with butter, then sprinkle brown sugar and cinnamon over the butter.
  • roll into a tight cylinder, then cut into 1” rounds.
  • put rolls in greased 9x12” pan and bake at 400°F for 17-20 minutes, until golden brown on top.

glaze:

4 oz. cream cheese
3 Tbsp. butter
1/2 tsp. vanilla
1/2 cup powdered sugar substitute
1/2 cup milk (optional)

  • mix cream cheese, butter, vanilla, and sugar.
  • add milk as needed to get desired consistency.

7/3/2022: on first try, these were not very good. there were a few problems that were not necessarily the fault of the recipe though:

  • the dough did not rise at all, maybe the yeast is off?
  • i added 4 Tbsp. of butter instead of 3 to the glaze, and it wound up like whipped cream. should have adapted cinnamon rolls glaze instead.
  • a little bit more salt might have improved the filling and glaze, too.
