1 tbsp. butter
4 cups fresh blueberries 3/4 cup sugar
3 tbsp. cornstarch
1/2 tsp. cinnamon
1/4 tsp. salt

  • melt butter in a large pot, add blueberries and cook for 2 minutes
  • add remaining ingredients and stir until dry ingredients are dissolved

2 pie crusts
1 egg
2 tbsp. water

  • line pie dish with one pie crust
  • beat egg with water and brush bottom crust with egg wash
  • add filling and top with second pie crust
  • brush top crust with egg wash and cut slits to allow steam to vent (or do decorative cutouts)
  • bake at 375°F for 50 minutes
  • cool completely before slicing

04/08/2024: made this with only cutouts on top instead of a full crust, and did not pre-bake the filling. the dry ingredients did not combine (which was fine) but think pre-baking would make a better pie.
