taco-sized corn tortillas

  • heat a shallow layer of oil to 350°F in a small pan
  • fry each tortilla 10-15 seconds per side and dry on paper towels

refried beans, warmed
taco meat
enchilada sauce
shredded cheese
chopped tomatoes
chopped scallions

  • top one fried tortilla with beans and taco meat
  • top with second tortilla, and cover with enchilada sauce and cheese
  • broil until cheese is melted
  • top with tomatoes and scallions
