2 batches beef taco filling
1 poblano pepper, diced
1 bell pepper, diced

  • brown beef and add onion, peppers, and spices
  • saute until vegetables are softened

8 oz. mexican rice (or yellow, spanish, etc.)

  • prepare according to package directions and add to the beef mixture

15 oz. can diced tomatoes, drained
15 oz. can of black beans, drained
1 cup frozen corn, defrosted and drained
8 oz. shredded cheese (mexican blend or cheddar)
2 pie crusts

  • add tomatoes, beans, corn, and cheese to beef and rice mixture
  • line a casserole dish or two pie dishes with pie crust and fill with beef mixture
  • bake at 400°F for 30 minutes
  • remove from oven and rest 5 minutes before serving
